Beet Cashew Milk

If you like beet juice, try this beet milk! The unexpected combination of beets and cashews might surprise you. 

Experience level: Intermediate

Ingredients

  • 1 small beet
  • 1 cup cashews
  • 1 cup water, plus more for soaking
  • 3 dates
  • 1 tsp honey or agave
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • Pinch of salt

Serves 1.

Kuvings AUTO10 Plus Juicer (no extension), assembled with the juicing strainer.

Directions

  1. Wash the cashews well.
  2. Soak washed cashews and pitted dates in water for at least 8 hours. Drain.
  3. Wash and peel the beet.
  4. Close the juicer's smart cap.
  5. Load cashews, dates, and beet into the juicer.
  6. While the juicer is operating, pour water through the opening in the lid in small portions.
  7. Open the smart cap to release the milk. If desired, strain the milk for a thinner texture.
  8. Stir in the sweetener, vanilla extract, salt, and cinnamon.
  9. Optional: Add a milk froth and beet shavings to the top as garnish.

Tips

  • Heat the milk if you want the sweetener, salt, and cinnamon to dissolve better.
  • Add coffee to make it into a beet latte.
