Ingredients
- 1 small beet
- 1 cup cashews
- 1 cup water, plus more for soaking
- 3 dates
- 1 tsp honey or agave
- ½ tsp vanilla extract
- ¼ tsp cinnamon
- Pinch of salt
Serves 1.

Kuvings AUTO10 Plus Juicer (no extension), assembled with the juicing strainer.
Directions
- Wash the cashews well.
- Soak washed cashews and pitted dates in water for at least 8 hours. Drain.
- Wash and peel the beet.
- Close the juicer's smart cap.
- Load cashews, dates, and beet into the juicer.
- While the juicer is operating, pour water through the opening in the lid in small portions.
- Open the smart cap to release the milk. If desired, strain the milk for a thinner texture.
- Stir in the sweetener, vanilla extract, salt, and cinnamon.
- Optional: Add a milk froth and beet shavings to the top as garnish.
Tips
- Heat the milk if you want the sweetener, salt, and cinnamon to dissolve better.
- Add coffee to make it into a beet latte.
